Tex-Mex Chicken Quesadilla (and Veg Version)




















This simple quesadilla is one of the only ways I can get Luc to eat chicken since he isn't thrilled about it. I also pretty much always have cooked chicken on hand or in the freezer from poaching or roasting a whole bird.

Tex-Mex Chicken Quesadilla 

1 small whole wheat tortilla
3 tbsp grated cheddar cheese
1 tbsp finely chopped green onion
2 tbsp finely chopped cooked chicken
chili powder, sprinkle.


(* I don't actually measure anything for these, this is just a rough idea)

Assemble the quesadilla. Only put toppings on one half of the tortilla and then fold it over. I like to put some cheese both first and last to make sure the whole thing melds together as it melts. 

In a frying pan on med-low heat, melt a tiny pat of butter (or you can spray the the pan with cooking spray,  but it doesn't taste as good). Press the quesadilla down occasionally as it cooks to flatten to make it easier for little mouths. Cook until golden, melty, and yummy. Allow to cool somewhat before cutting to keep the goodness from escaping. I usually make myself a couple at the same time.


Vegetarian Version: Substitute black beans or pinto beans for the chicken. Mash them with a fork and use like a spread to prevent them from rolling out of the quesadilla.

    I just made these for Eric (yes, me, I made it!). Eric threw the bits of quesadillas on the floor without even tasting them but I was able to steel a couple of pieces before that and I loved it. Eric is getting to be sooooooooooo picky. If he can, he would drink his meals or be on snacks all day long. I try to limit his snacks and when he has some it's healthy things. Anyway, I just wanted to thank you for your amazig blog. I have 2 other recipes from here that I'll make this week. Will let you know how they turn out for me.

  2. Thanks! I'm proud of you for trying out cooking! Luc sometimes won't try something and just throws it on the floor too, but he often will eat it if I give him it later in the day or the next day. Sometimes all I have to do is pretend that I want to eat it in front of him and that I don't want him to have any of it and make it into a little game and tell him "that's good that Luc doesn't want to eat it cause Mama wants ALL of it!"-- he then gets desperate to try what I'm finding so tasty. Let me know if you try the others....even if you hate them!
