Recipe Shout Out:Spinach Ricotta Bites

Since I'm working on a couple of things at the moment (as well as studying for two exams) I am posting a recipe shout out instead. These Spinach Ricotta Bites are one of the only ways that my son will eat spinach -- and my husband likes them too! I am greatly appreciative to Catherine over at Weelicious for posting this recipe.
